Merry Christmas everyone. Today i am going to share with you coconut macaroon cookies. Hope you guys have a wonderful day. 

Ingredients

180 gm sweet condensed milk
100 gm desiccated coconut 
1 large egg

Methods

1. Mix everything together until well combined.
2. Make it into a small ball size and put it in paper cup(optional). 
3. Bake at the preheated oven at 180 degree Celsius for 15 minutes or until slightly brown in colour.

Sorry for not posting regularly. It is because Christmas is coming soon and works are pilling up. Anyway, today i am going to share with you guys, Coconut Cupcakes. You can use desiccated coconut if you don't have fresh fried coconut which i show you in the picture. It smells so good and taste so good too. Have a try. =D 

This apple cinnamon cupcake is so soft and fluffy. It smells so good too. Feel free to add more around another 1/2 tsp of cinnamon if you like the taste stronger. But 1/2 tsp is just enough to bring out the smell and deliciousness. I use 2 kinda small Fuji apples but you can use any apples or substitute to one big apple instead of 2.

I forget to include milk into the picture. hahaha.

Cut apple into small bite size

Ingredients
100 gm butter
70 gm sugar 
2 eggs,  beaten
100 gm flour, sieved
1 tsp baking powder
1/2 tsp cinnamon powder
20 gm milk
2 Fuji apples

Methods
1. Preheat oven to 180 degree Celsius. 
2. Cream butter and sugar until light and fluffy.
3. Add in beaten eggs little bit at a time until it's finish. Beat until well combined.
4. Sieved in flour, baking powder and cinnamon powder until well combined.
5. Mix in milk and mix well.
6. Add in chopped apples in, mix well.
7 Divide in into cupcakes paper.
8. Bake at the preheated oven for 25 minutes or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time).

Today i'm going to share with you guys one egg moist chocolate cupcake. You guys can double the recipe to make into round cake instead of cupcake. But you need to adjust the time to around 1 hour for a whole cake(depends on it size). Anyway, it smells so good, so easy and so moist. You guys can also replace Milo powder with cocoa powder but Milo powder make the cupcakes smell so good. It's worth a try. As for the milk, it means 1/2 cup and another 1/4 cup of milk. I manage to make 10 small cupcakes. Next time i'm going to fill it up little bit more to make it bigger.  
Ingredients 

125 gm of Butter 
1/2+1/4 Cup of Milk
1/2 Cup of Sugar
75 gm of Cooking dark chocolate
1/3 Cup of Milo powder ( you can use Vico as well)
125 gm of Flour
1/2 tsp of Baking Powder
1/4 tsp of Baking Soda
1 Egg

Methods

1. Melt butter in a pot. After it melted, add in milk. Cook until the milk is the same temperature as the butter.
2. Add in sugar, stir until dissolved. 
3. Add in cooking dark chocolate and stir until it dissolved and well combined.
4. Stir in Milo powder until mix well.
5. Cool the mixture to room temperature.
6. Preheat oven to 170 degree Celsius.
7. Sifted in the flour, baking powder and baking soda in the mixture. ( Divide into two batches) Stir until well combined and no lumps. Do not over mix.
8. Add in egg(slightly beaten). Mix well.
9. Divide the mixture into the cupcake papers. 
10. Bake at the preheat oven for 30 minutes or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time)

Today i'm going to share with you guys carrot cupcakes recipe. It is soft and smell so good! It is delicious. Next time i will reduce the sugar little bit because it is quite sweet for my taste. 







Carrot Cupcakes Recipe
Ingredients

2 eggs
1 cup of caster sugar 
1/2 cup of oil
1 cup of flour
1 tsp of cinnamon powder
1 tsp baking powder
1/4 tsp baking soda
150 gm carrots, finely shredded 

Methods

1. Preheat oven to 180 degree Celsius.
2. Shred your carrots thinly. Put it aside.
3. Beat eggs and caster sugar until thick, fluffy and foamy light pale colour. 
4. Beat in the oil until well combined around 1-2 minutes.
5. Mix in the dry ingredients( flour, cinnamon, baking powder, baking soda). Mix well.
6. Finally, pour in the carrots and mix well. 
7. Divide the batter into the muffin cups.
8. Bake in the preheat oven for 25 minutes  or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time)

Ingredients
1 ripe avocado 
350 ml milk, plus extra to thin if needed
100 ml sweet condensed milk, plus more to taste 
Ice cubes

Methods
1. Blend ripe avocado, milk, and sweet condensed milk together until well blended.
2. If the texture is quite thick add few tablespoon of milk to thin it. 
3. Pour into a glass and add ice cubes. 

I make the ice cream into chunks before fill them up

Today i'm going to share with you guys cream puff and custard fillings recipe. It is easy and yummy. You doesn't have to use custard as the fillings. You can try ice cream as filling instead.( can get my ice cream recipe from my blog) I guarantee it is delicious too. Sorry as i forget to take picture of my custard fillings. =D 




Cream Puff Recipe

Ingredients

1/2 cup of butter
1 cup of water + 1 tbsp of sugar
1/4 tsp of salt
1 cup of flour
4 eggs

Methods
1. Preheat oven to 200 degree Celsius.
2. Place butter and water + sugar in medium saucepan, bring to a boil over medium heat. As soon as it boils, remove from heat and stir in salt and flour until form a ball.
3. Stir in eggs one by one. You need to stir quickly so the eggs will not scramble.
4. Place batter in a piping bag and pipe out.
5. Bake for 20-25 minutes, do not under bake.  
6. Wait until cool, then make a hole at the bottom or cut it into half then pipe in your favourite fillings. 


Custard Fillings Recipe

Ingredients

2 eggs
250 gm milk
10 gm flour
10 gm corn starch
40 gm sugar
10 gm butter

Methods
1. Beat eggs and sugar together until mixed. 
2. Mix milk with flour and corn starch together until well combined.
3. Combined beaten egg mixture with (2).
4. Cook over medium low heat with a large heavy saucepan. Cook until the mixture is thicken. Make sure to stir constantly to avoid burning.
5. Remove from heat when it thicken. 
6. Place in the butter and stir until well combined. 

Noted: Whipping cream and condensed milk must be cold but not '' hard cold''. =) 
            Before serving, let it defrost for few minutes.
           



Ingredients

500 ml cold whipping cream
200 ml cold condensed milk
Method

1. Beat cold whipping cream until thick and stiff in peak.
2. Mix in cold condensed milk. Mix until well combined.
3. Mix in  instant coconut milk powder until well combined. 
4. Refrigerate overnight and you ready to serve! 

Noted: Whipping cream and condensed milk must be cold but not '' hard cold''. =)
            Before serving, let it defrost for few minutes.

1. Beat cold whipping cream until thick and stiff in peak.
2. Mix in cold condensed milk. Mix until well combined.
3. Mix coffee powder and water together.
4. Pour the coffee mixture into your ice cream and mix well.
5. Refrigerate overnight before serving.

Today i'm going to share with you guys marble cupcakes with mix fruits.
Noted: -I sprinkled the mix fruits with some flour so it will not fall to the bottom of the cake.
           - Next time i will mix the mix fruits in the cake mixture so the cake will not collapse at
           at the area i put the mix fruits( it's heavy) and the cake is light. 

Ingredients
A
125 gm butter, room temperature 
125 gm all purpose flour
1 tsp baking powder
1/4 tsp baking soda
125 gm caster sugar
2 large eggs

1 tbps milk

C
1/2 tsp coffee powder
1/2 tsp coffee flavour
1/2 tsp water

Methods

1. Preheat oven to 180 degree Celsius.
2.Sieve your flour, baking powder, caster sugar, and baking soda in a big bowl.
3. Add in butter and eggs
3. Beat around 2 minutes or until the mixture is well combined.
5. Lastly add in 1 tbsp of milk in it and beat around 1 to 2 minutes. Do not over mix.
6. Mix C until well combined. Take some cake mixture from step 5 and mix with C.
7. Scoop your white cake mixture into paper cup then put some coffee cake mixture in it. Swirl it with toothpick to make marble effect. ( Do not put too much mixture in it otherwise it'll flood out)
8. Sprinkles some mix fruits with some flour then put some on top of the cake. 
9. Bake in the preheat oven for 25-30 minutes or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time)

Hi. Today i am going to share with you guys my egg muffins recipe. It is so easy and yummy. You can replace the fish balls with hot dogs, bacon, and even leftovers. You can even put some shredded cheese in it. As i don't have much left in the refrigerator, i used fish ball only. =)




Ingredients

3 large eggs
1/2 onion, diced
1/4 cup carrots, shredded and diced
4 fish balls, diced
1/2 tbsp of oil
1/4 cup of milk
1/4 tsp of baking powder
1/4 tsp of salt


Methods

1. Preheat your oven to 180 degree Celsius.
2. First, dice your onions, and fish balls into cubes.
3. Secondly, shred your carrots then dice it into cubes.
4. Beat the eggs, oil, milk, baking powder, and salt together until well combined.
5. Put the onions, carrots, and fish balls into your muffin tin.
6. Pour the egg mixture until you cover your ingredients.
7. Bake at the preheat oven for 25 minutes. ( Different oven has vary heat and time)

Today i'm going to show you guys how to make peppermint cupcake with cream cheese frosting. It takes sometimes to prepare and bake but it totally worth it! My piping technique is not that good yet. HAHAHA. But it is delicious. 
Noted: -The whip cream must be very cold( but not hard cold) before you whipped it up.
            -Remember to wait the cupcakes to totally cool down before you pipe your frosting 
            because it'll melt if it's hot or warm. 

Ingredients (Peppermint Cupcake)
A
125gm butter, room temperature 
125gm all purpose flour
1 tsp baking powder
1/4 tsp baking soda
125gm caster sugar
2 large eggs 
1/2 tsp strong peppermint essence 
Few drops of green colouring
B
1 tbps milk

Methods

1. Preheat oven to 180 degree Celsius.
2.Sieve your flour, baking powder, caster sugar, and baking soda in a big bowl.
3. Add in butter, eggs, strong peppermint essence and few drops of green colouring.
3. Beat around 2 minutes or until the mixture is well combined.
5. Lastly add in 1 tbsp of milk in it and beat around 1 to 2 minutes. Do not over mix.
6. Scoop the mixture into your paper cup (scoop around half should be enough). Otherwise it'll flood out. 
7. Bake in the preheat oven for 25-30 minutes or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time)
8. Pipe the cream cheese frosting on your cupcake while it is cool down. 

Ingredients ( Cream Cheese Frosting)

Today i'm going to show you guys how to make easy yet delicious peppermint cake. I already baked this cake three times. The 3rd time i realized i'm out of yogurt in my fridge. So i omitted the yogurt and i used 3/4 cup of milk instead of 1/2 cup. It is still delicious. Hope you guys enjoy it and feel free to leave a comment.

Ingredients

350 gm butter
2 cups of sugar
5 large eggs
1 tsp of strong peppermint essence
few drops of green colouring
3 cups of flour
2 tsp of baking powder
1/4 tsp of salt
1/2 cup of milk
110-120 gm of plain yogurt ( 1 pack of plain yogurt)


Methods

1. Preheat oven to 180 degree Celsius.
2. Beat butter and sugar until pale in colour, fluffy and light.
3. Add in the eggs one by one and beat well. DO NOT over mix.
4. Add in peppermint essence and mix well.
5. Sieve baking powder, salt and flour in another bowl.
6. Mix in the sieved flour mixture ( i divide into two times) alternately adding the milk( also divide into two times). Mix until well combined. DO NOT over mix.
7. Lastly add in yogurt and mix until well combined. DO NOT over mix.
8. I divide the cake mixture into two bowls and dye one with green and leave another plain.
9. Pour in alternately into 26.5 cm square baking tin and use a fork to create the marble effect. Tap the tin on the table few times to avoid having any bubbles.
10. Bake on the preheat oven for 45 minutes or insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has different heat and time)
