Peppermint Cupcake with Cream Cheese frosting
2:00 AMToday i'm going to show you guys how to make peppermint cupcake with cream cheese frosting. It takes sometimes to prepare and bake but it totally worth it! My piping technique is not that good yet. HAHAHA. But it is delicious.
Noted: -The whip cream must be very cold( but not hard cold) before you whipped it up.
-Remember to wait the cupcakes to totally cool down before you pipe your frosting
because it'll melt if it's hot or warm.
Ingredients (Peppermint Cupcake)
A
125gm butter, room temperature
125gm all purpose flour
1 tsp baking powder
1/4 tsp baking soda
125gm caster sugar
2 large eggs
1/2 tsp strong peppermint essence
Few drops of green colouring
B
1 tbps milk
Methods
1. Preheat oven to 180 degree Celsius.
2.Sieve your flour, baking powder, caster sugar, and baking soda in a big bowl.
3. Add in butter, eggs, strong peppermint essence and few drops of green colouring.
3. Beat around 2 minutes or until the mixture is well combined.
5. Lastly add in 1 tbsp of milk in it and beat around 1 to 2 minutes. Do not over mix.
6. Scoop the mixture into your paper cup (scoop around half should be enough). Otherwise it'll flood out.
7. Bake in the preheat oven for 25-30 minutes or until insert a toothpick or cake tester and if it comes out clean then it done. . ( Different oven has vary heat and time)
8. Pipe the cream cheese frosting on your cupcake while it is cool down.
Ingredients ( Cream Cheese Frosting)
1 cup of whipping cream,cold
225gm of cream cheese, at room temperature
1/2 cup icing sugar
Methods
1. Beat the cold whip cream until soft peak. Do not over mix as it will turns into butter.
2. Keep it in refrigerator first.
3. In another bowl, beat your cream cheese until fluffy. Slowly add in the icing sugar.
Beat until well combined.
4. Fold half of the whipped cream into cream cheese mixture. Fold with spatula. Add in
another half of whipped cream and fold until well combined.
