Coconut Cupcakes Recipe

Sorry for not posting regularly. It is because Christmas is coming soon and works are pilling up. Anyway, today i am going to share with you guys, Coconut Cupcakes. You can use desiccated coconut if you don't have fresh fried coconut which i show you in the picture. It smells so good and taste so good too. Have a try. =D 

Ingredients  
A

125gm butter, room temperature 
125gm all purpose flour

1 tsp baking powder
1/4 tsp baking soda
125gm caster sugar
2 large eggs 

50 gm fried shredded coconut or desiccated coconut
3tbsp instant coconut milk powder

B
2 tbps milk

Methods

1. Preheat oven to 180 degree Celsius.
2.Sieve your flour, baking powder, caster sugar, and baking soda in a big bowl.
3. Add in butter, eggs,  fried shredded coconut and instant coconut milk powder .
3. Beat around 2 minutes or until the mixture is well combined.
5. Lastly add in 2 tbsp of milk in it and beat around 1 to 2 minutes. Do not over mix.
6. Scoop the mixture into your paper cup (scoop around half should be enough). Otherwise it'll flood out. 
7. Bake in the preheat oven for 25-30 minutes or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time)
