Carrot Cupcakes Recipe

Today i'm going to share with you guys carrot cupcakes recipe. It is soft and smell so good! It is delicious. Next time i will reduce the sugar little bit because it is quite sweet for my taste. 







Carrot Cupcakes Recipe
Ingredients

2 eggs
1 cup of caster sugar 
1/2 cup of oil
1 cup of flour
1 tsp of cinnamon powder
1 tsp baking powder
1/4 tsp baking soda
150 gm carrots, finely shredded 

Methods

1. Preheat oven to 180 degree Celsius.
2. Shred your carrots thinly. Put it aside.
3. Beat eggs and caster sugar until thick, fluffy and foamy light pale colour. 
4. Beat in the oil until well combined around 1-2 minutes.
5. Mix in the dry ingredients( flour, cinnamon, baking powder, baking soda). Mix well.
6. Finally, pour in the carrots and mix well. 
7. Divide the batter into the muffin cups.
8. Bake in the preheat oven for 25 minutes  or until insert a toothpick or cake tester and if it comes out clean then it done.  . ( Different oven has vary heat and time)
